At the slightest hint of cold weather my children start asking for hot chocolate.  This is a bit ironic, given the fact that they don’t love to wear winter coats, hats or mittens.  In all honestly, if it’s above 40 degrees they think it’s okay for shorts.  Crazy boys.  All that said, they do love their hot chocolate.  I do too.  Once the cold hits I’m chilled to my bones until the spring thaw, so I often have a mug of something warm close by.

While traditional hot chocolate is lovely, it’s fun to change it up every now and then.  Last week, while stocking up on tea, I came across a box of Chocolate Chai.  My first thought?  Genius!  The creamy flavor of chocolate and the spice of chai, it seemed the perfect match.  Because I love the challenge of making things on my own, upon returning home I quickly headed to the kitchen, to try my hand at creating a homemade version.  A few batches later, I had a family approved chocolate/chai inspired drink.

We even took a thermos with us on our Sunday morning hike.  After a cool morning of crunching leaves, collecting acorns and walking sticks it felt good to share a cup of something warm.

Spiced Hot Chocolate


  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/3 cup hot water
  • 1/8 tsp salt
  • 2 cinnamon sticks
  • 1/2 teaspoon cardamom
  • 1 inch fresh ginger, peeled
  • 1 teaspoon whole cloves
  • 4 cups milk (Dairy or non-dairy)
  • 1 teaspoon vanilla extract


  1. Combine the cocoa, sugar, salt, cinnamon sticks, cloves, cardamon fresh ginger and water in a saucepan. Over medium heat, stir constantly until the mixture boils. Cook, stirring constantly for 1 minute. Stir in the milk and heat, but do not boil. Remove from the heat and add vanilla; stir well. Serve immediately.

    The chocolate/chai combination is one that’s relatively new to me but I really love it. I can only imagine how delicious this hot chocolate is.

      Kathryn, it hadn’t really occurred to me until I saw it in the store. Chocolate and cinnamon are a great combination, so chai works really well too.

  3. Oooh…this looks utterly delicious. i often do a hot choc with cinnamon and a bit of cayenne pepper, but I never thought about adding in cardamom or ginger! This is going on my ‘must try’ list!

      Bentley, the thermos was a gift, but I’ve seen them on Amazon too. Enjoy! We’ve been making hot chocolate almost everyday this week.
