Every now and then I pull out my Grandma’s recipe box looking for inspiration. There is just something about seeing her handwriting, she had beautiful penmanship. But not all the recipes contained in the box are handwritten. There are magazine and newspaper clippings, sections snipped out of the back of boxes, product inserts. Seeing all of it reminded me of my own recipe binder, with the addition of printed emails and website recipes.

Last week, I was looking through the ‘Soup’ section for some supper inspiration and came across this clipping for Southwestern Chicken Soup. Many of the recipes I’ve found within her box easily convert to vegetarian, this one was especially quick. I swapped out the chicken for a can of black beans in addition to the pintos.

Ingredients
- makes about 15 cups
- 2 tablespoon extra virgin olive oil
- 1 medium onion, diced
- 1 medium red pepper, diced
- 2 cloves garlic, minced
- 1 1/2 cup corn (fresh or frozen)
- 1 (4 ounce) green chilies or 1 fresh jalenpeno, de-seeded and chopped
- 1 (14 ounce) can diced tomatoes, including juice
- 1 (15 ounce) pinto beans, rinsed and drained
- 1 (15 ounce) black beans, rinsed and drained
- 4 cups vegetable broth
- 2 teaspoons cumin
- Salt and pepper to taste
Instructions
- Heat oil in dutch oven over medium-heat. Add in onion, red pepper, corn, garlic and chills (or jalepeno, if using). Saute until tender. Add in tomatoes, pinto beans, black beans, vegetable broth and cumin. Simmer for 15 minutes. Season to taste with kosher salt and pepper.
- Top with some queso fresco, cilantro and avocado slices with a few blue corn chips on the side.
