I love oatmeal. Most mornings, my first meal of the day is a bowl of oatmeal topped with fresh fruit, flax seeds, a drizzle of maple syrup and the occasional handful of chopped pecans or almonds. I eat it every season of the year. Except for summer, it’s just too hot. The last thing I feel like is warm cereal for breakfast.

After seeing a couple of blogs feature raw oatmeal for breakfast I decided to try it for myself. Not surprising, I loved this version of oats too. Perfect for breakfast in the summer months, topped with juicy, ripe fruit and crunchy almonds. Sometimes I don’t even add the maple syrup, the fruit is just enough sweetness.

Make this cereal what you want…mix it up with whatever fruit is in season, whatever sweetener you love. Add a handful of nuts if you like. I usually add chopped almonds or pecans for an extra crunch.

Raw Oatmeal and Fruit

inspired by the Kitchn and The Little Red House

1/4-1/2 cup old fashioned oats (not quick oats, they just get soggy)

Vanilla soy milk or almond milk

Ground flax seeds

Fresh fruit

Handful of chopped nuts

Maple syrup, honey, agave

Pour oats into a cereal bowl and top with just enough milk to cover them. Allow the oats to soak for a few minutes. Sprinkle on your ground flax. Follow with fresh fruit, chopped nuts and a drizzle of maple syrup or your sweetener of choice.

I’ve been eating this most mornings, but it tastes especially good after the early morning fitness camp I’ve been doing this summer. A bowl of these oats fill me up and I’m not hungry again until lunch. I figured if this breakfast was good enough for fitness camp mornings it would be just as good to have before our mountain hikes last week…and it was.
