Peanut Butter Fruit Dip

The Fourth of July always marks the halfway point of summer for me.  From that day on it feels downhill until the end of summer and the first day of school. If this last week is any indicator of how fast the rest of our days will be I’m in trouble.  It feels like it was just Monday, I blinked, and now Friday is here.  I’m happy to say that our days have been filled with all that we love to do in the summer. We even had our first ears of corn on the cob this week, nothing says July more than that.  The boys would eat it for breakfast, lunch and dinner if I’d let them.  They are loving it just that much.

To finish out my week of snack posts I’ve got fruit dip.  This is not the usual overly sweet, cream cheese, powdered sugar kind of dip.  With just three simple ingredients; peanut butter, honey and yogurt you can feel good about making this for your kids.  My boys have loved it with berries, but if you have banana fans at your house it would be delicious with them too.

Peanut Butter Fruit Dip

adapted from Wannabe Chef

1/2 cup vanilla yogurt

1/2 cup natural nut butter (peanut or almond)

1/4 cup honey

Fruit for dipping

In a small bowl stir together all ingredients until well combined.  Serve with your choice of fruit for dipping.

Easy enough for a quick snack break and then back to enjoying your summer days.  I know that’s what we are doing.
