It’s hot. Summer feels like it has really arrived, blazing temps and all, just in time for the Fourth of July. We’ve been in overdrive around here pumping out the popsicles almost as fast as we eat them. It doesn’t even need to be snack time to enjoy them. They are great for breakfast too!
We decided to go the patriotic route for our most recent batch of popsicles. Layers of fruit puree and vanilla yogurt make these a delicious way to cool off as you are celebrating the Fourth…or any day of summer for that matter.
Patriotic Popsicles
1-2 cups vanilla yogurt
Fruit Puree
1 1/2 cups fruit, fresh or frozen and thawed (I used strawberries and raspberries for the red stripe, blueberries for the blue stripe)
2 tablespoons honey
1/4 cup freshly squeezed orange juice
Puree all ingredients until smooth in blender or food processor.
Pour a layer of fruit puree (red), then add a layer of the yogurt and top with final layer of puree (blue). Freeze until solid, at least 4 hours.
