I don’t know if it my eagerness for spring or just the need for change, but I am craving lighter foods.  Don’t get me wrong, I love the comfort foods of winter, but I am ready for the fresh taste of produce that does not include root vegetables.  At the store the other day I walked past these beautiful mangos.  Their cheerful yellow color caught my eye and I quickly added them to my cart.

Yesterday, as I was contemplating what to make for lunch, my eyes landed on those beautiful mangoes and I immediately thought…salsa!

It had exactly the light, fresh flavor I’d been craving.  This mango salsa from ‘in the little red house’ is more of a method than a recipe.  Tailor it to your own taste, adding more or less of any one of the ingredients.

Mango and Black Bean Salsa

1 mango, diced

1 can of black beans, rinsed and drained

1 handful of red bell pepper, diced

1 handful of red onion, diced

1 handful of cilantro, chopped

Juice of one lime

salt & pepper to taste

I had mine with a few blue tortilla chips and avocado on the side, but really could have just eaten it straight out of the bowl with a spoon.  So delicious.  Maybe while your munching away on your chips and salsa go check out ‘in the little red house’.  It is a charming blog with great recipes, beautiful pictures and writing.  I’m so glad to have stumbled upon it.

    I made almost the exact same thing but with more peppers and no mango the other day, and we DID eat it with spoons! I plan on eating the rest with chips though. :) sooo delicious!
