The boys have been hounding me for weeks to have a party. Not really sure where the idea came from, but they have been determined to make it happen. So with the end of the school year approaching it seemed like the perfect time to celebrate school being out and the start of summer. After much discussion, we decided on an ice cream party and invited a few neighborhood friends.
When we sat down to make our list of toppings this chocolate sauce was the first one they requested. It is a favorite at our house, especially during ice cream season, which for us, seems to start in the summer. I don’t even remember how this recipe landed in my kitchen journal, I only know I’ve had it for at least 10 years. It was scribbled down quickly on a lined page that is now chocolate stained with sticky, curled edges. Aren’t those the best kind of recipes? I think so.
Homemade Chocolate Syrup
1/2 cup sugar
1 tablespoon baking cocoa
2 1/2 teaspoons cornstarch
1/2 cup water
2 tablespoons Earth Balance or butter
1/2 teaspoon vanilla
In a medium saucepan combine sugar, cocoa, cornstarch and water. Bring to a boil, stirring frequently. Stir in butter and vanilla until butter is melted and combined. Serve warm over ice cream. Store extra in refrigerator.
A little hint about having an ice cream party. Scoop the ice cream into the little dishes before hand and put them in the freezer. This way when everyone arrives (and by this I mean 20 some little boys) you aren’t scrambling to scoop ice cream. A lot faster and a lot less sticky.
The day before our little party was cold and rainy. We decided to put together an ice cream cone garland to decorate things up a bit. Of course we hand to fancy up the chalkboard too.
Luckily, the day of the party, it was beautiful and we sent everyone outside to eat and soak in the sun. Ice cream finished it wasn’t long before the boys were dividing into teams for a game of backyard baseball . With the windows open I loved hearing the sounds of summertime drift in the house.
As some of the boys were going home I heard them tell Ben that they had a great time, saying, “we should do this every month…no, every week!” Judging by that I’d say our first go at an ice cream party was a success.
