Do you ever crave something light, fresh and with ingredients you can easily find in your pantry or fridge?
If so, then my friends, this salad is for you…
Chickpea Salad with Lemon, Parmesan, and Fresh Herbs
1 15 oz can of chickpeas (garbanzo beans) rinsed and drained
2 tablespoons chopped, fresh basil
2 tablespoons chopped, fresh parsley
2 tablespoons fresh lemon juice
4 teaspoons extra virgin olive oil
1 small garlic clove, minced
1/3 cup freshly grated parmesan cheese
Coarse kosher salt and black pepper
Combine chickpeas, basil, parsley, lemon juice, olive oil, and garlic in a medium bowl. Add parmesan cheese and toss gently to blend all ingredients. Season to taste with salt and pepper.
This salad is great for a light lunch or could be used as a side dish too. As I was making this I kept stopping to take in the parsley and basil…there is really nothing like the smell of fresh herbs. I think parsley just smells like spring time, don’t you?
