Do you ever crave something light, fresh and with ingredients you can easily find in your pantry or fridge?

If so, then my friends, this salad is for you…

Chickpea Salad with Lemon, Parmesan, and Fresh Herbs

from BonAppetit

1 15 oz can of chickpeas (garbanzo beans) rinsed and drained

2 tablespoons chopped, fresh basil

2 tablespoons chopped, fresh parsley

2 tablespoons fresh lemon juice

4 teaspoons extra virgin olive oil

1 small garlic clove, minced

1/3 cup freshly grated parmesan cheese

Coarse kosher salt and black pepper

Combine chickpeas, basil, parsley, lemon juice, olive oil, and garlic in a medium bowl.  Add parmesan cheese and toss gently to blend all ingredients.  Season to taste with salt and pepper.

This salad is great for a light lunch or could be used as a side dish too.  As I was making this I kept stopping to take in the parsley and basil…there is really nothing like the smell of fresh herbs.  I think parsley just smells like spring time, don’t you?

Have a great Wednesday!

It’s what I had for lunch too. So delicious! I can’t wait to use the parsley and basil from our garden this summer when I make this.

YUM!! This looks so good. I just soaked, boiled etc. a LOT of chickpeas. Going to make the seasame noodles tonight. The kids asked what we were going to eat and I said “We get to eat with CHOPSTICKS!!” Great idea to get them to try something new.

Summer is just beginning to leave Australia, but I think I could definitely have this regardless of the season. It looks delicious!
