Last week, I mentioned that I had started reading the book ‘Ratio’ by Michael Ruhlman. I’ve wanted to learn about recipe development for awhile now and this book seemed like a good place to start. The ratios in this book are based on baking and cooking by weight, using a kitchen scale. This was new for me. I had read about baking this way, but it seemed intimidating, hard. Well, it isn’t. In fact it’s very easy. After reading the first few sections of the book I decided to set out and tackle a recipe. First up was muffins. Why not start with something easy? I quickly found out that there is nothing easy about developing your own recipe. I have a new found respect for the authors of the all cookbooks on my kitchen shelves. While I had the basic ratios in place, there are other things to think about; texture, appearance, flavor. It took me four batches of muffins to get a poppy seed recipe that I felt was good. Next up…cookies. Peanut butter chocolate chip cookies to be exact. After brainstorming a few flavor combinations of my own I asked the boys what they would like. I should have known this would be their request. Although I already have a recipe for these cookies that I like I decided to give it a go. Making something to top a recipe I already have isn’t the point. For me, it’s more about learning, and the challenge of trying something new in the kitchen. So, I sat down with my notebook and started writing out the list of ingredients, measurements and steps to follow. Once this was done I began baking.
